Rethink How you Eat for Better Health (A contemporary film study)Eat food. Not too much. Mostly plants. -- Michael Pollan. How often do we really think about the food we are eating? If there is truth to "we are what we eat", maybe now is the time to examine just how the American diet is affecting our health. Are U.S. industrial food and agriculture systems contributing to the increasing rates of obesity, heart disease, diabetes, and cancer? What about genetically modified foods? Eighty percent of the food sold in North America contains ingredients made from GMOs that have not been adequately tested for safety. Do you have a child with food allergies? Could GMOs be at least partly to blame for the food allergies that are affecting an estimated three million American children? The objective of this course is to raise awareness about the relationships between food, health, agriculture, and the environment. Improvements are possible - not only for individuals, but also for entire communities, such as schools and hospitals. A different documentary film will be shown and discussed each week.
